A different and easy appetizer where the zest of lemon and orange accentuates the glossy black of our olive.


  • 500 g black olives
  • 2-3 tbsp. olive oil
  • 1 tbsp balsamic vinegar
  • ½ chili pepper crushed
  • Zest of one lemon, strips of orange zest and juice of ½ orange


Mix all the ingredients together in a bowl and add some salt and pepper, (check how salty the olives are before adding the salt), let the olives marinate for about one to two hours and serve in a bowl. We can serve with a little oregano and olive oil.
